CREATING WITH CHOCOLATE CLAY - 6.30pm to 9pm
Also known as candy clay, chocolate plastique this medium is a modern, exciting and edible way of making flowers and decorations.
This course is designed for the more advanced cake decorator having completed Wilton Course 3 or similar and who has already covered a tiered cake with fondant. We will be designing and creating a master piece from fondant and chocolate clay. List of tools and recipes will be provided

COST: $85.00 (includes loan of equipment, certificate of completion and recipes)

Chocolate Clay Course - Part 2 Marie-12 To illustrate the versatility of modeling chocolate I made this display piece for the class.
In week we discussed a 'borderless' cake finish and sponging technique for colouring cakes. We looked at various impression and molding techniques that can be used with chocolate clay. We also ripped apart the dummy cake upon which this course was based so that students could see exactly how it was put together. We also discussed designs and techniques and after a demonstration, students made their own chocolate roses.
This week (second and last lesson) students will put together their own three tiered dummy cake with their own design.
